Mixed fermentation Saison style ale aged in Vin Santo casksBabbling Brook is a Saison inspired by the refreshing minerality of ciders and Chablis. The base beer was fermented with a mixed culture of classic Saison strains, wild yeast, and bacteria. Post fermentation, the dry and lightly acidic Saison was aged in 600 gallon Vin Santo casks for 6 months. The dessert wine casks imparted subtle nutty notes with a distinct brackish character softened by a light cellar quality.
