Last Of It's Kind is a true double decoction hefeweizen. Decoction is a technique used to raise the temperature of the mash, by taking a portion of mash and boiling it, and then returning it to the main mash. It is a quite time consuming process, but adds another layer of complexity to the flavor. This beer features over 50% wheat and a classic hefeweizen yeast.
