Brewed using techniques usually found in Lambic-style production, this ale utilised a turbid mash (packed with unmalted wheat) and has been refermented with a mixed culture of brettanomyces, lactobacillus and pediococcus, in an oak cask (in this instance, a second-fill bourbon barrel).This hazy, deep golden ale, boasts complex aromas of funk, gooseberry, and lime peel. Up front, the palate is dominated by sour character - cooking apple, soor plooms, and lemon. As the flavours develop, notes of caramelised pineapple and toasted brioche emerge. Juicy acidity is balanced with a light, soft texture, and a slow-building warmth.
