DOUBLE DRY-HOPPED IPA WITH PHANTASMDiaphanous (dye-ah-fen-ess): characterized by extreme delicacy of form; translucence; ethereal; wispy.Brewed for our third anniversary with a blend of New Brunswick 2-row, pilsner and organic oats, plus Canadian wheat - we added thiol-rich New Brunswick hops to the mash, then hopped the kettle with New Zealand Nectaron and Nelson Sauvin. We added a full bag of Phantasm to the whirlpool. What is Phantasm, you ask? Phantasm is a thiol precursor powder made from Marlborough Sauvignon Blanc grapes - these thiols are converted into tropical, exotic fruit flavours under the right fermentation conditions.Diaphanous pours a translucent gold with a stable haze, creamy palate, and throws off all kinds of notes of ripe mango and pineapple, with an undertone of dank watermelon gummy. It is soft and delicate and symbolizes a step forward in our understanding of brewing creative, full flavored IPA's.
