This beer was created using a variety of organic stone fruit picked and processed throughout the 2024 harvest. All of the fruit was grown by the Collins family at their orchards in Selah, Washington.Three varietals of pluots and one peach were blended in order to showcase the character of the season in the Yakima Valley. The fruit was refermented with a blend of saison chosen to highlight the varietals and then refermented to condition in the bottle.Bottled 12/19/2024Conditioned with: Organic sugar.Cellar: I think these lighter peach/pluot beers are best consumed fresh, and I'd drink it this spring/summer/fall. Best by spring 2026.
