We took inspiration from Norwegian farmhouse brewers for our latest IPA. Standard practice is to boil the beer for an hour during the brewing process. Like many Norwegian farmhouse brewers we did not boil this beer AT ALL. We brought it up to pasteurization temperatures, added a load of citrusy hops to the whirlpool and pumped it straight into the fermenter. We used a Norwegian farmhouse Kviek yeast and intentionally fermented this beer at 95 degrees. We then double dry hopped it with our favorite American and Southern Hemisphere hop varieties.
