Batch: 003Time in barrels: 52 monthsTitratable Acidity 13,3 g/LALC 7,2% VOL.375 mlThis beer started as our annually produced Christmas wheat beer, on its own a great red and malty beer. We inoculated the beer with mixed cultures of Brettanomyces, Lactobacillus and Pediococcus and left it in a freshly emptied red wine oak barrel for a secondary fermentation and maturation. Enjoy the fruity, spicy and funky aromas followed by flavours of toasted oak, dark fruit and slight vanilla. The finish is dry and tart with balancing tannins.
