Collab w/ DekkeraWe cooked up this Brett-forward pale ale with our good buddy Dan from Dekkera who has been killing it with his mixed culture farmhouse style beers here in NJ.Using all malt from NJ's own Rabbit Hill Malthouse, we started with a grist heavy in local spelt, whirlpooled with a bunch of tasty Cashmere, and fermented mainly with Bootleg Biology's Funk Weapon #3. Before some extended aging, we dry hopped with more of that same Cashmere, bringing hefty waves of overripe tropical fruit.Extra aging and conditioning brought even more ripe fruit along with plenty of musty leather and that funk that only Brett can deliver.
