The Astral Project - Brett Petit Verdot Sour (2019)

We used the lees-culture of our 2019 Brett-Nat Petit Verdot made in collaboration with Cape Jaffa Wines, to ferment a simple lager-style wort. Savoury farmhouse yeast characters balance the acid and grip from a cold-soak P.V. sparkling. All stainless and intriguingly refreshing. Our seasonal, Biodynamic vineyard-brewery concept - The Astral Project - coming together nicely.
