We were looking to achieve a light bodied, full flavoured and juicy pale ale using all New Zealand hops. Using Nelson Sauvin in the brewhouse and Moutere as our dry hop, we produced lovely tropical mango and passionfruit flavours. The beer is intentionally unfiltered to preserve its hazy and juicy characters.What are the little things that make a big difference: The hopping method and biochemical effects produced via bio-transformation are the biggest drivers of flavour and aroma in the beer.The beer in a nutshell: A light bodied pale ale that’s fermentation hopped for juiciness and been left intentionally hazy.
