Bittersweet Funk

This is a blend of bittersweet Hyslop crabs, aged with house bacteria, plus a funky Perry. On the nose you get pear funk first with subtle passionfruit. The flavour is citrus tropical with slight acetic and a touch of tannins to finish. Complex with lots of funk.
