In celebration of this year's wine vintage & hop harvest. Pouring a blush rose with soft aromas of winter cherry, unripe strawberry, and soft hay that swirl around the nose. To enhance the delicacy of the uniquely red berry character provided by the Australian Enigma hop, we introduced Australian Cabernet grapes into a sour co-fermentation of Red CR51 yeast and a specialty selected Flanders Ale blend. Fermentation on charred American oak softens and rounds out the cabernet must while a gentle acidity and light funk promotes balance. A heavy handed addition of Brettanomyces provides a moderate funk and a background fruitiness peppered by hints of strawberry while finishing out with a very dry, refreshing character.
