We gave a newly cultured novel yeast Lachancea Thermotolerans (first isolated from wild bees) a chance to ferment a big juicy New England IPA. It did good (though we were expecting some acidity which we didn't get). Double dry-hopped with the ultimate combo of Citra and Mosaic (22g/l) and milkshaked up with lactose.
