Ghost Note Preserves: Balaton Cherry (09/14/21)

Colorado didn't have a great cherry harvest year in 2021. We received some sweet cherries, but the beers didn't turn out how we wanted them, and they've long been dumped. But we did get enough sour Balaton cherries from a single grower in Palisade, CO to do a single barrel, EF exclusive blend. We selected Ghost Note, our spelt farmhouse ale, and fermented the fruit inside the barrel just like it was 2014 and there were people sleeping on the driveway. It has an amazing and intense cinamon note on the nose and has moderate acidity. A real treat, for sure.
