Elder is a quaffable Berliner Weisse that uses a high percentage of wheat in the mash, German hops, and a German ale yeast during fermentation. It’s lightly soured, easy drinking, with some low-intensity Brett character. We added modest fruit additions of tangy foraged elderberries and medieval medlars - grown in the garden of one our farmers’ market customers and bringing flavours of stewed apples
