Brewed with 100% Australian grown grains.Organic Pilsner, Raw Wheat & Raw Triticale from Voyager (NSW). Hopped hotside w/ Saaz (CZ) & Aramis (FR) to 23 IBU.Fermented hot using our house culture (@mogwai) w/out temp control for 3 weeks in stainless before naturally garding ambient for a further 5 weeks.Packaged on December 29th 2023 and bottle conditioned for 5 weeks.Inspired by the great examples of France, very close to the Belgian border.Aroma's of dandelion & jasmine jump out of the glass.On the palate it presents as lemongrass, daffodils & well toasted bread.Bitter & textural, with an inviting palate weight that has length but still manages to remain dry.Delicate while sophisticated, a lovely accompaniment for this last month of summer.
