Big Dumb DIPA isnt here to f*ck around. This beer is a showcase of what technique can do to drive hop flavours straight into your glass. The beer was mash hopped with Cascade and a good dose of oats to add bound thiol precursors. Citra, Nelson Sauvin and Mosaic were then added at specific times and temps in the whirlpool to extract the desired full, rounded fruit flavours. Enzymes and a Thiol boosting yeast blend were then used during fermentation with both a mid-ferm and post-ferm dryhop weighted heavily on Citra and Mosaic Cryo (up to 20g/l).TLDR:The result is a golden 8% DIPA with dank overripe peach, mandarin and papaya aroma. A herbal bitterness and sticky fruit salad palate that finishes clean and off dry.
