Spontaneously fermented little beer with freshly foraged birch sap and spruce tips aged in oak barrels for 14 months. Bottle conditioned with local honey for those fine bubbles.This beer represents the times of the slow, gradual decline of winter and the promise of the new upcoming season. Homage to those first weeks of March, that still feel like winter, but mother nature is truly awakening underground.
