Some of my best ideas seem to arrive in the early hours of the morning. I’ll wake from a dream, grab a pen, and scribble something down before it slips away. More often than not, the notes make no sense the next day. One morning, though, I read: “pear sour with one of those green ice lollies upside down in the glass.”The lolly in question was Piggelin — a Swedish classic, neon green and bursting with sweet, fruity nostalgia.The beer itself starts with a hefty dose of pear purée and the unique character of Philly Sour yeast. On its own, it’s pleasant but maybe a little too safe. Add the influence of melted tutti frutti ice cream, though, and it transforms into something playful, surprising, and just a bit magical.
