Release Two: Time Will Tell

Much of our work involves waiting. Making beer isn’t the fastest process, particularly with lagers and especially with barrels. So when we concocted this barrel fermented & conditioned Baltic Porter, one of the most crucial elements was time. We took freshly emptied, second use, 14-year Elijah Craig barrels and brewed straight into them with a blend of lager strains. After this beer was done fermenting, we moved the barrels into our walk-in cooler to lager for five weeks. Then we emptied the beer into stainless and let it lager for an additional six weeks.
