Ale Fermented in OakØ is a blend of mixed culture saison brewed with buckwheat and aged in neutral oak barrels.The 2025 blend was made from a puncheon of saison brewed in spring 2023 and a barrel brewed in spring of 2024, both with raw organic buckwheat and spelt from Chimacum Valley Grainery.The beer was refermented to condition in the bottle.Bottled 02/06/2025Conditioned with: Organic sugar.Cellar: Should continue to develop and improve with age for the next 12 months, at which point I expect it will plateau and drink very nicely for another year or so. Best by 2028?
