Allegro with Pomace

With a grist and hop treatment reminiscent of Saison, Allegro offers a base favoring an expressive yeast fermentation and the hop character to match. Following an 18-month spontaneous fermentation in oak casks we re-fermented a small portion on the pomace from a lightly pressed blend of white grape varieties grown here on Music Vale Road.
