Horseradish SaisonThis beer was brewed in collaboration with Dok Brewing Company from Ghent, Belgium. This brew is a meeting point between two traditions, two different cultures. Brace yourself - Belgian style saison meets Lithuanian horseradish.Saison beer style is well known in Belgium where it was brewed in early spring to be consumed during the warm summer days. This beer style benefits from special saison yeast that ferments beer in higher temperatures, this way creating an interesting pepper and clove like aroma profile.We have decided to push things a bit further by finding a compelling spice that might get along with this beer profile - we added locally sourced horseradish.In order to extract some horseradish taste without too much pungency we added some store bought horseradish to the whirlpool, but the best we saved for later. We managed to find a real horseradish root on our own land. We made a puree out of it and added it to the secondary fermentation.Horseradish aroma goes along with the peppery aroma from the yeast and pushes trough as a spicy note in the aftertaste.
