For our first dubbel we stuck close to the classic style. We combined Belgian malts ranging from ultra-light Pilsner to raisiny Special B with caramely dark candi syrup. We employed a classic Belgian strain from a famous monastery-brewery to create a balanced peppered-banana character. Low hopping, as this beer finishes relatively dry compared to most of our beers.
