Our turbid wort, made using barley & unmalted wheat was fermented using a mixed culture in stainless steel. Followed by spontaneous fermentation in ex-Chardonnay oak casks for 14 months. The resulting beer was then aged further on wild gooseberries for 6 months.Clean, refreshing acidity. Tannic oak. Sparkling apple, white grape and citrus. Subtle funk.
