In Belgium there is a tradition of brewing a special, small batch beer for Christmas time. These are usually the most converted beers of the year, typically strong ales brewed with holiday spices.St Nick’s Christmas Fish is our Belgian Christmas beer, a collab with @triggerfishbrewing. It features a robust Belgian yeast, fermented and conditioned warm which brings out the full spectrum of fruit and spice yeast notes. We also brewed it with homemade Belgian Candi sugar for extra caramel notes, and cinnamon and naartjie peel. Lovely stuff!
