This beer was born from a conversation with Nadège and Jonathan, organic market gardeners at Jardins du Petit Clos, a few kilometers from the brewery.The mirabelle plum trees interspersed in their growing beds were bursting at the seams in July 2022, and the idea of ​​making a beer from them appealed to us all. So, the day before a storm, they harvested the fruit, which we immediately placed in vats for carbonic maceration. A few days later, we topped up the vat with two barrels of beer fermented without added yeast. After aging for twelve months, the result is a beer with a sharp acidity, a beautiful minerality, and a light mirabelle plum flavor in the background.
