We've aged the wild Gose in gin barrels from @three_societies , which had previously held gin infused with Korean botanicals like perilla leaves, pine needles, young ginseng, and juniper berries.The botanical character of the gin, combined with the Seoul Gypsy's house yeast, has resulted in a flavor profile reminiscent of a mint flower field, citronella, lemon candy, and peppermint. The high-proof gin barrel lends a certain weight to the drink, allowing the flavors to condense and be expressed with restraint.Only 193 bottles were produced.
