As with any other brewery, one of the biggest things we vibe off working in beer is that we’re working with active products that have their own little eccentricities and quirks. Brew plans can change at will week on week and the start of a week can look completely different by the end of the week. Boss Edit, named for an ism from when the captain Sean made an alteration to our brew plans recently, is an IPA that is fully Polly’s to a T. Featuring a four-hop lineup of Azacca, El Dorado, Idaho 7 and Simcoe, this beer is positively bursting at the seams with pineapple, mango, passionfruit and (no really) jelly tots. Rounded off with equal measures of even more El Dorado and Simcoe in the whirlpool for bitterness to balance, when we say 100% Polly’s, this is what we mean.
