Ciderkin

This is our take on Ciderkin, the lower alcohol cider drunk by the gallon in decades past. Our aim was a low alcohol cider with plenty of body and flavour. While pressing the cider apples, we removed some of the free-run juice, replacing this with water and macerating overnight for good tannin extraction. After fermentation and maturation, we blended this with a robust, barrel aged cider.
