But sometimes you can’t.Ya gotta go and poke em, tweak em, improve them… This beer is that same impulsive itch.With a super clean and lean malt base that glows like late summer sunlight, the dynamic mum and daughter duo of Simcoe and Mosaic lays down the old skool law of clean precise citrus, resinous pine and fragrant floral notes that helped put the West Coast in WCIPA.Now that would have been ‘just awesome enough’ right there, but we had to fiddle with it, didn’t we… fighting the urge to just leave it and losing; we then dumped in a whack of newish kid Strata and extra super new kid NZH109 right in there and upped the ante with musky bubblegum, passionfruit, peaches and blueberries all the while bringing a smooth clingy bitterness with a muscular but agile palate weight into a pleasant lengthy finish.Ya had to go and mess with it huh?
