‘coexistence’ // barrel fermented saison // aged on local meyer lemon zest & bush honey // 6%Production time / 23 monthsWe took a portion of this barrel fermented saison and conditioned on 2.3g/L of meyer lemon zest from @rayners_orchard & 30g/L of blue mallee bush honey from @starecsbushhoney for 20 days.Packaged on September 6th 2021 and bottle conditioned for 8 months.Aromas of lemon verbena, rock melon & rosemary.On the palate it has a unique driving bitterness that we attribute to the zest & honey. Preserved lemons, thyme & honeydew.Fluffy carb and energetic.
