We’re big fans of Conor Gallagher’s small but mighty brewery outside Rome. When he told us he was coming over to Ireland to visit relatives we of course invited him down to the brewery for a catchup and a brew. Hilltop are most known for their amazing dark beer output inspired by classic Irish and British styles.During our discussions on the recipe, we talked about a legendary Italian dark ale that utilised tobacco leaves in the recipe. This imparted a mellow spiciness to the finished beer and was an instant classic. We’re adding a pinch of organic tobacco leaves and Cacao nibs to this brew for a rich, complex export stout that still drinks easily like a classic Irish stout.
