I have wanted to use this yeast for awhile in a beer now. It’s a wild wine yeast sourced from the Kaisterstuhl (Emperors Chair) region of Germany. I called it Kaisertisch which literally translates to Emperors Table, because it’s a table beer which is hilarious in itself. Table beers usually finish in the 2.5-3.0% ABV range whereas this beer finished at 5%, making it an imperial table beer – also hilarious. The yeast did everything it said it would – it created acidity, BIG pineapple aroma/flavours, finished DRY and it's just downright drinkable. It excites me about the wealth of untapped potential waiting in the realm of winemakers’ yeast for use in beer!
