Sour Stout Aged in Pinot Noir and Bourbon Barrels with Cherries2022 Club Exclusive ReleaseWe soured this stout in Bourbon and Pinot Noir barrels. After a year of aging, we transferred it onto dark Hartland and pale Rainier cherries from Milburn Orchards (Elkton, MD). The result of blending the barrels and cherries results in a surprisingly restrained balance. The dark malt provides toasty-chocolate aromatics to compliment the vanillin from the charred American oak. The cherries enhance the dark fruitiness provided by the wine barrel and mixed culture.
