A sour mixed-ferment cider using an apple variety discovered by my father and named after my sister, Linda. The bulk of our 2020 Linda harvest will appear as a wild cider collaboration with Peckham's Cider (called The Orchardist), but what you have here is a small proportion taken in a different direction by the addition of one of our mixed-ferment cultures. The result is a cider but not as you know it. But it is definitely a cider you might expect from Cell Division! It’s tart, floral and super-dry with a fruity brettanomyces character.
