A Gose is traditionally soured with lacticbacteria, but we actually used a specialyeast strain that produces lactic acid as wellas alcohol. While many modern Goses havefruit additions, we opted to keep it classicand let the simple mixture of acidic andmildly salty flavours shine on their own.
