The Grace of Maybe is a 6.0% ABV mixed fermentation saison brewed with lemongrass, re-fermented on white and yellow peaches, and finished with Madagascar vanilla beans. The aroma offers delicate notes of floral stone fruit, lightly toasted meringue, and jasmine tea. The white and yellow peaches present with a juicy ripeness on the palate, followed by flavors of coconut flesh and white pepper.  The lemongrass plays a minor supporting role, highlighting the complexity in the soft acidity of the beer. Further revealing itself as a faint smoky bloom in the finish, the vanilla builds slowly as the beer warms. What is most remarkable is the texture of this beer—it is light, fluffy, airy.
