Our take on this classic Belgian style. Inoculated rather than spontaneously fermented, spending nearly 3 years in old Pinot Noir barrels. Racked off onto Central Otago cherries for a secondary ferment of fruit sugars in stainless before being hand bottled. Pouring a clear garnet red with a fast dissipating head, the aromas are funky sweet with oak, tobacco and fruit all playing a part. Tart but not puckering sour, with a full cherry flavour and a pleasant lingering woody sweet cherry finish.
