“Imitation is the sincerest form of flattery”, it was once said, and for our 5th anniversary, we’re taking a shot at one of the best IPAs in the state: Confluence Brewing Co.’s Des Moines IPA. We've flipped the script and have dubbed our version: Seniom Sed.It starts with 2-row barley and medium caramel malts, into which are layered the PNW hops that give Des Moines IPA its signature citrusy, piney hop character. That, however, is where imitation ends. For our part, we give Seniom Sed our Cold IPA treatment - lager yeast, a low fermentation temperature and extended cold conditioning.
