Leeway: Cranberry

Our Gose-inspired Farmhouse Ale begins with a base of Connecticut grown wheat and barley and undergoes a primary fermentation with our mixed culture in stainless steel followed by a stopover in one of our oak foeders. Alongside additions of sea salt, coriander and citrus, this batch was re-fermented on sliced cranberries. With gentle salinity and a pleasing acid profile Leeway is all about refreshment but in this batch we find that classic perceived dryness and natural fruit character that reminds us of the holidays ahead.
