The first ever Koelschip wild ale brewed in Hong Kong, fermented in the open air on Lamma Island in January 2021 under the shade of Bouganvillea and Eucalyptus Trees, capturing the essence of the ecosystem by harnessing the wild yeast and bacteria present in the flora & fauna that night. aged for 3 years in a new oak barrel and blended with an American Brett saison aged in French Oak.Nose: Stone fruit, acetic notesAppearance: Brilliant rich gold, cream head.Taste: Apricot is prominent up front, with residual juicy sweetness, some low floral honey notes, hints of higher acidity, creamy caramel and light butterscotch, subtle oak character and a rich and round finish.
