This beer is something else. It might be one of our favorites so far. The beer was made using smoked malts, and we added a mixed fermentation saison yeast culture to it. It aged gracefully for almost a year. It was tasting nice, but missed something.

That’s when we got our hands on fall raspberries. They are a little bit milder than summer raspberries, and they had the acidity the beer was lacking. The raspberries spend 3 months macerating in the beer. The smoke, funk and fruits balance each other out nicely.
