In Bloom: Barrel 61 was brewed in April of 2020 with local pilsner malt, organic raw white wheat, and aged hops. After naturally cooling outside overnight, it underwent primary fermentation in New York oak with a favorite house culture. This barrel was selected as a standalone for its exceptional complexity, and nuanced aromatic depth.
