Last fall we had the incredible opportunity to work with fruit from John Cline, Ontario's leading pomologist at the University of Guelph's research orchard.We brought in 37 different varietals, and created 9 different blends. This is the 3rd of these blends. Made with 4 different apple varietals: originating from the US, France, and England.What's it like? The aroma is somewhere between fresh lemons, banana sorbet and baker's ginger. The flavour is canned pineapples, soaked in juice - or like sucking on a dried apricot. The vibe is very beachy, with only the mildest orchard floor notes.The varietals in this blend are:Baldwin, Médaille d'Or, Chisel Jersey and Winekist.
