Each Apricot Made Gold is an aged saison expressing ripe apricot flesh, with complex underlying notes of almond, marzipan, and Amaretto.We sourced several varieties of apricots from a single farm in Beamsville, Ontario, and ripened them all in our brewery for three days, requiring the happy but laborious task of turning each apricot by hand once a day. The combination of different varietals completes our platonic ideal of the perfect apricot flavour and aroma, while still remaining foremost a beer.Each Apricot Made Gold was blended from four unique recipes, brewed during our 2021 and 2022 brewing seasons, using barley, wheat, spelt, buckwheat and oats, with hops from Germany and New Zealand. After one to two years in barrels, our saison rested upon these whole apricots for three months, until it was bottled in late October, 2023.
