Simcoe has been a pillarstone of this brewery since day one, and possibly our most used hop across the board. We love the straight up “Cascade on steroids” vibe we get from this wildly popular varietal, and feel its incredibly intense flavour profile of grapefruit, passionfruit, pine and berry are best utilised in an equally intense IPA. With a lick of biscuit sweetness from our use of Golden Promise in the mash, and wrapped up in our bespoke LA3 strain to accentuate all those fruit-forward juicy flavours.
