Spontaneously acidified, then spontaneously fermented and matured in three neutralized sauvignon blanc 229L vosges and tronçais oak barrels, racked into three NJ apple brandy barrels, two of which held apple cider following brandy maturation. Finished for six to ten months in the apple brandy barrels; an overall blend of one- and two-year-old beer.
