Berkeley Haze uses a new yeast strain from a lab in, you guessed it, Berkeley, California. The team at Berkeley Yeast have engineered a strain that unlocks more thiols during fermentation, the compounds that are locked in certain hops that, when released, can produce an array of tropical aromas that simulate pear, pineapple, and sauvignon blanc grapes.
