Pinot Noir Barrel-Aged Barn Door (w/ Hibiscus & Citrus Zest)

This beer was brewed with a simple malt bill of continental pilsner, wheat and oats and fermented with a French saison yeast. We were fortunate enough to get some freshly emptied Pinor Noir barrels from our friends at Alba Vineyards, where rested the beer for about 9 months. We then racked it to our stainless tanks and conditioned it on hibiscus and fresh citrus zest. We bottled it still with fresh yeast and let it condition from several months to 3.0 volumes of CO2 to create a lively, bright, and balanced beer. The nose is bright and gives way to elegant tart and floral flavors of hibiscus and citrus with a dry and slightly acidic finish.
